Breakfast Cookies

INGREDIENTS

• 1 cup dates (soaked in warm water)

• 1 banana

• 2 tbsp nut butter

• 1 ¼ cup almond flour

• ½ cup oats (gluten free)

• ¼ cup pecans

• ¼ cup coconut (unsweetened)

• ¼ cup raisins (unsweetened)

METHOD

• Soak dates in warm water for at least 10 minutes
• Pulse in food processor until desired texture (smooth but chunky)
• In a mixing bowl, add dates, banana, nut butter and mash together
• Mix until combined, may be sticky but don’t worry
• Spoon out with table spoon
• Bake at 350ºF for 15-20 minutes until golden brown

YIELD

Approximately 24 cookies
