Pesto as per our hands-on cooking class at Nuara Cooking School  in Sicily, part of the Exodus’ Sicily Food Adventure:

10 leaves basil

1 clove garlic

6 whole almonds

1 diced perfect tomato

“1 big salt” per our instructor Francesco No Parmesan!

No pine nuts! Mash it all up using mortar + pestle Toss into hot cooked pasta Delicioso!!
